1/3 Cucumber, shaved
2 carrots, shaved
4 big mushrooms, shaved
4 tbsp. red wild rice, cooked
2 slices of smoked tofu, chopped
1/2 tsp. miso* dissolved in some warm water
1 tbsp. olive oil
1 tsp. apple vinegar
Sea salt, pepper and chili to taste
Mix the warm rice with the remaining ingredients and season with the sea salt, pepper and chili. Enjoy.
* Miso: if not to hand, also without miso delicious.
