1/2 cup of pinto beans,
sprouted or soaked in water for at least 8 hours.
Cook Approx. 20-30min.
1/2 cup red wild rice,
wash and cook in double quantity of water, approx. 35min.
2 slices of smoked tofu, chopped.
Mix with the still warm rice.
Season with sea salt and pepper.
2 carrots, shredded
1/4 Cucumber, shredded
3 mushrooms, shredded
1 tbsp. olive oil
1 tsp. apple vinegar
Mix all and season with sea salt and pepper.
Serve all beautifully on a plate.
Add some coconut oil onto the pinto beans and sprinkle with cumin.
